Welcome to The Agave Lab
Exploring and Celebrating Agave Culture, Craft, and Cultivation
The Agave Lab grows over 20 species of agave and counting, focusing on native California and Southwestern US agave varieties that were traditionally used for food, medicine, fiber and distilled spirits.
In addition to agave, we grow bio-regionally and climate appropriate crops like mesquite, elderberry, prickly pear, and other edible, medicinal and drinkable dryland and subtropical plants.
Help us cultivate a culture of joy and resilience.

Why Agave?
Agave is more than a plant—it’s a symbol of resilience and sustainability. We’re exploring how agave can be a sustainable alternative to other crops and products, from distilled spirits to textiles, surfboards, building materials, fuels and medicine. By honoring traditional practices and innovating for the future, we’re creating a model for regenerative agriculture that thrives in arid climates.
